I like fish and rice. Can be for any meal really. Tonight, I made for dinner.
First, I salt cured a big slab of salmon filet. Made about a third into poke. A third was baked crusted with fermented bean paste mixed with mayonnaise. I know. Sounds nasty. But delicious!!
The last third will get smoked tomorrow. Kiawe and honey smoked salmon. Yum.
The baked salmon came out a perfect medium rare. And even Mulan had a poke bowl with brown rice. Glad she can eat.
Day 2
As planned, I made honey smoked (kiawe) salmon. It was a big hit.
And a little salmon poke nacho snack.
Day 3
Fried salmon poke omelette
And smoked salmon melt
